Lavender Lemon Cupcakes
One of the most delicious baked desserts that I love to make are lavender lemon cupcakes. These delightful cupcakes are so easy to bake and have proven to be a mouth-watering addition to parties or events. I found that lemon cupcakes with dried lavender buds make a perfect snack and dessert for any type of occasion. I bake lavender lemon cupcakes all year round no matter what the season is.
At first, I genuinely didn’t feel like I could combine lavender with lemon cupcakes successfully. But ever since I tried them I have become addicted, and I have loved them ever since. I find that on days when I’m especially stressed I bake them just so I can enjoy their relaxing aroma. When I found out they can be a great ingredient to lemon cupcakes, I tried baking them immediately and knew that my readers would love to hear about how they turned out. So here’s my very own lavender lemon cupcake recipe that I’d like to share with you!
Ingredients:

Lavender Lemon Cupcakes
1 cup flour
1 tsp dried lavender buds
1 tsp baking powder
tsp salt
3 tbsp softened unsalted butter
cup sugar
1 egg
2 tbsp lemon juice
1 tbsp lemon zest
reduced fat buttermilk
1 cup confectioners sugar
Another 5 tsp lemon juice
Another 1 tsp lemon zest
1 tsp lavender buds for garnish
Steps:
1. Preheat the oven to 350F. While waiting for the oven to heat, bring out your cupcake baking trays and place the liners in. You can also pray it with non-stick spray if you don’t like to use liners.
2. Meanwhile in a large bowl, mix flour, baking powder, lavender and salt altogether. When done mixing, set aside.
3. In a separate bowl, mix your sugar and butter using an electric mixer in medium speed. After that, add you egg and continue mixing. Add the lemon juice and zest.
4. Get your flour mixture and add 1/3 of it into your sugar and butter mixture. Add half of the buttermilk. Add in another 1/3 of the flour and mix together with the rest of the buttermilk and flour mixture.
5. Scoop in the batter into your waiting cupcake tray. Fill them up to 2/3 full. Bake inside your oven for 20 to 25 minutes until they become golden brown in colour.
6. For the icing, add in your lemon juice, confectioners sugar and zest. Drizzle it on top of your lavender lemon cupcakes and sprinkle dried lavender buds on top before serving.
