Lemon Filled Cupcakes

There’s no other perfect snack on a bright sunny day than bright lemon filled cupcakes! I often bake this delicious cupcake recipe during the sunny summer weather. It is refreshing and excellent with any type of cold drink. I have also baked this when parents came over for dinner the other night and they ended up being a huge hit. The strong tang from the lemon makes them even more irresistible. My mother loves this cupcake recipe of mine and has requested it multiple times since I first made it for her a few years ago. As a lemon cupcake lover myself, I think lemon filled cupcakes are the perfect companion for any day and any type of occasion.

Here is my ultimate lemon filled cupcake recipe:

Ingredients:

Lemon Filled Cupcakes

Lemon Filled Cupcakes

2 2/3 cups all-purpose flour
1 tsp baking powder
tsp salt
cup butter
1 2/3 cups sugar
1 tbsp vanilla essence
1 cup milk 1 cups lemon curd

 
Steps:
- Preheat your oven to 350F. Line 24 muffin cups or two cupcake baking trays with liners. If you don’t like to use liners, you can spray the trays and cups with non-stick cooking spray instead.
- Take a medium bowl and whisk the flour together with the salt and baking powder.
- In a separate large bowl, combine the butter together with the lemon zest and sugar. Mix until the mixture becomes light and fluffy. Use an electric mixer for this.
- Add in your vanilla essence to the butter mixture then add in the milk.
- Add your flour mixture into the butter mixture and stir until all is combined.
- Scoop the batter into your muffin cups or cupcake baking tray and bake them inside the oven for 16 to 19 minutes.
- After baking, take the little fellows out of the oven and let them cool.
- Add lemon curd on top of each cupcake.
- Enjoy.
