Mini Lemon Cupcakes
Mini lemon cupcakes are perfect now a days since we all seem to love everything mini! Mini iPod, mini phone, minicomputer and mini dogs! But now lets talk about cupcakes and how we love their mini-ness. I often bake these tiny cupcakes when the kids come over or if I conduct a birthday party for my nephews and nieces. These bite-size goodies are often a favourite at the party. Why? Its because we all love cute things, gadgets or food, don’t you agree? I’d like to share a really awesome recipe I discovered awhile ago and give some advice and tips on how I personally make my mini lemon cupcakes.
Recipe for mini lemon cupcakes:
Ingredients:

Mini Lemon Cupcakes
3 cups all-purpose flour
2 tbsp baking powder
1 tsp baking soda
tsp salt
1 cup softened butter
1 cups granulated sugar
2 tsp vanilla essence
3 eggs
8 oz sour cream
2 tsp shredded lemon peel
For the frosting:
3 tbsp softened butter
1 cup sifted powdered sugar
2 tbsp lemon juice
tsp vanilla essence
1 cups sifted powdered sugar
2 to 3 tsp milk
1 tsp shredded lemon peel
Steps:
- Preheat your oven to 350F. Take 2 mini cupcake tins and line them with small muffin cups. Set them aside while you make the cupcake batter.
- In a medium bowl, combine the baking powder, flour, baking soda and salt.
- Take another bowl and mix your butter using electric mixer. Continue mixing until the butter becomes fluffy. Add the vanilla essence and granulated sugar. Continue mixing and add the sour cream. Continue mixing and then add the lemon peel.
- Scoop about 1 tbsp of the batter into your waiting muffin cups and bake them in your preheated oven for 18 to 10 minutes.
- While the little babies are baking, make your lemon frosting.
- Take a medium bowl and beat together the butter and powdered sugar. Continue beating and then add vanilla and lemon juice. Beat in the milk.
- Stir your lemon peel.
- When your baked mini lemon cupcakes are done, frost them and garnish with lemon peel, edible flowers and lemon slices for decoration.
Mini lemon cupcakes are a lot cuter with decorations so have fun and experiment as much as you can!
